Asparagus Tapioca Pancake

On a skillet add some olive oil, ¼ cup of diced asparagus, 2 crushed garlic powder, sea salt, and herbs du province, fry for 3 to 5 min, set aside in a bowl, and clean the skillet. In bowl mix 2 Tips of tapioca flour and on egg, mix well, pour the batter into the same skillet with some olive oil and spread like a pancake, let it cook for 2 min like a pancake, turn, add the asparagus filling, and shredded cheese or vegan cheese cook for 2 more minutes. Fold in half and serve.
